Grandma’s Shortbread Cookies and Warm Wishes for Wonderous Winter Holidays!

If exams and projects are over (or even if they’re not and you need a little, sweet break) whip up these simple shortbread cookies.  These are the classic rich  melt-in-your-mouth buttery cookie that taste like Christmas.

Impress your loved ones by putting a dozen in a small box for a delicious home-made gift!

Grandma’s Shortbread Cookies

Ingredients:

 1/2 cup cornstarch
1/2 cup icing sugar
1 cup all-purpose flour
3/4 cup unsalted butter, softened (= 1 1/2 sticks, no margarine or substitute)

Directions:

  1. Sift together corn starch, icing sugar and flour.
  2. Blend in butter with a wooden spoon (or your hands) until a soft, smooth dough forms.
  3. Shape into 1 inch balls.
  4. Squish with a fork.
  5. Add half a pecan for garnish.
Bake 10 minutes at 300  degrees until edges are just lightly browned.
Soooo buttery good.
