Best end-of-summer Pasta Ever!

Well, you might not be able to grow your own tomatoes, but the Farmer’s markets, fruit stands and even the grocery stores have amazing sun ripened tomatoes on special right now.  Go get some ripe tomatoes, fresh garlic and basil and make this pasta dish now. 

Even better, while your coffee water is boiling in the morning, cut up the tomatoes, crush the garlic. rip up the basil leaves  and leave it all to infuse with the olive oil for the day.  Then when you get home,  toss it all  with some hot pasta, top with some grated parmesan and you have an amazing dinner ready to go.
