Grandma’s Winter Warmer Kale and White Bean Soup

This is a great, easy soup for a cold winter day.


1 onion

4 cloves of garlic

two tins chopped or plum tomatoes

one tin white cannelini or kidney beans

chopped carrots

chopped red or yellow pepper and or squash

3 cubed potatoes (I leave the skins on for ease and nutrition)

3  Mennonite or Chorizo sausages (something strong and smokey – chorizo is spicier if you like heat)

bunch of kale


Fry onions and garlic in a bit of olive oil.  Add cubed sausage (to make this vegetarian use some soup stock and smoked paprika to give the rich flavour).  Keep stirring for a few minutes.

Add tinned tomatoes, carrots, potatoes, chopped peppers and water or stock to desired consistency.

Cook for twenty minutes.  Add chopped kale and cook for 15  more minutes.

Eat with a loaf of crusty bread and a salad.
