Shaun’s Amazing Rib Recipes (this is for you Alex Merryweather!!)

By popular demand, we had  ribs for our last supper.  This is not your quick, easy, every day dinner, but some Sunday put them in the oven early afternoon, sit down to study and have them  ready for a great group dinner!

As with most recipes – this is the basis – you don’t have to have every ingredient to make a good sauce.

Long Cooked Baby Back Ribs

1 rack of ribs rubbed with oil and thyme.   If you have a broiler pan put some water in the bottom.  Otherwise sprinkle a bit of water in your baking pan.  Bake, meat down, covered in foil, for 3- 4 hours @ 250 degrees.

Turn over, pour on sauce and cook for 30 minutes more, turn up broiler to bubble at end for a couple of minutes.

Sauce (heat in a sauce pan)

1/4 c butter

2 Tbsp water

1 Tbsp garlic powder

1 Tbsp onion powder

1/2 Tbsp cayenne

1/2 c. BBQ sauce

1 TBSP hot sauce

1/2 TB pepper

1/2 c. ketchup

Beef Ribs – boiled first and then baked

4 pounds beef short ribs

1/4 ts.p salt and pepper

1 Bay leaf

1 stalk of celery

1/2 onion (unless you are Alex – then omit  🙂

Boil ribs and all ingredients above for 45 min.

Drain, put in baking dish.

Heat the following sauce ingredients:

1/4 T salt and pepper

1/4 T garlic

1/4 T cinnamon

!/4 cup ketchup

1 cup of brown sugar

1/2 cup applesauce

3 Tbsp. lemon juice

Put sauce on ribs and let marinate 3- 4 hours

Then Bake three hours @ 225 degrees or until the meat falls off the bones.

Serve  either ribs with  potatoes mashed with garlic, parmesan and cream and Shaun’s salad had blue cheese, pears, pecans and a light oil and vinegar dressing.  Enjoy!!!
