Danielle’s Desperation Pasta

(when you have no time and need to use things on hand! Everything can be cooked in one pot – so only the pot and your bowl to wash up!)

Chinese noodles, spaghetti or fettucine

Peanut butter

Soya sauce

Sesame oil

Garlic

Ginger

Veggies (ie. Snow peas, peppers, broccoli, carrots, beans, cabbage  . . . .)

Chicken or tofu or meat (optional – you get protein from the peanuts alone!)

Cook noodles and drain. Put in soup bowl.

Cook chicken or tofu in with garlic ginger and chilies – put aside

Flash fry veggies in oil  – put aside.

Put sesame oil, more garlic, peanut butter and soya sauce  (fish sauce, sambal, coconut milk optional)

Throw in cooked chicken and veggies. Coat in sauce.  Put on top of noodles and top with chopped peanuts, green onions and cilantro.

*Note – you can do the exact same thing and instead of putting everything in the peanut sauce, instead put it on top of the noodles, cover with a tin of chicken stock and a drizzle of sesame oil and you have a great Chinese soup.
