Basic Barley Stew

In a large pot bring one cup of barley to the boil and simmer gently in lots of water. Prepare the following veggies and add along with the spices, after one half hour, simmer one half hour more and serve:

1 large onion diced                                                   4 cloves garlic, minced

2 chopped carrots                                                    3 stalks celery, diced

1 chopped zucchini                                                   1 cup chopped cauliflower

3 med. chopped potatoes                                        1 tsp. salt                                           1 tsp. dill weed                                                                        pinch cayenne

1 tsp. basil                                                                 1/2 tsp. black pepper

1 tsp. paprika                                                             1/2 tsp. ground cumin seed

2 tbsp tamari soy sauce                                          1- 28 oz can stewed tomatoes

1 can Black Beans

Alternatively you can sauté the vegetables in a lightly in a little Olive or Coconut oil before adding to the cooked Barley. Simmer 10 min more and serve.
